Orval
Brasserie d'Orval · Pale Ale - Belgian · 6.2% ABV
Orval is a Belgian Trappist pale ale brewed by the Abbey of Notre Dame d'Orval. The recipe features a malt bill of pale and caramel malts combined with Belgian candi sugar, and it is hopped with varieties such as Hallertau, Strisselspalt, and Styrian Golding. The brewing process is unique among Trappist ales, utilizing a primary fermentation with a traditional top-fermenting house yeast followed by a secondary fermentation and bottle conditioning with Brettanomyces wild yeast. Additionally, the beer is generously dry-hopped during the secondary fermentation. This process creates a complex, dry, and effervescent beer with a firm hop bitterness, fruity and herbal aromas, and a signature rustic funk that evolves and deepens as the beer ages.
