Ectôpläsmic Schwilly Stix is a Farmhouse Ale and Saison brewed by Brasserie Fantôme in collaboration with a homebrew group known as The Brähery. The grain bill consists of pale malt, unmalted wheat, and corn, fermented with an American ale yeast that develops a noticeable Brettanomyces character. It is brewed with Motueka hops, Thai lime leaf powder, Indian coriander, and natural green spirulina coloring. The beer pours a pale golden color and offers a clean, citrusy aroma with prominent notes of key lime, lemon, and floral elements. On the palate, it delivers a fluffy mouthfeel with flavors of sourdough, peppery yeast, kiwi, and dried pineapple, balanced by a light herbal bitterness and an earthy, dry finish.
