Dragon's Head Perry is a traditional dry perry made entirely from pears. The recipe blends seedling pears unique to Vashon Island, harvested from century-old trees planted by homesteaders, with true English perry pears and Taylor's Gold pears. The fruit is pressed directly on the farm and undergoes a slow fermentation at low temperatures throughout the winter. The finished perry delivers a subtle sweetness and a delicate pear flavor balanced by soft, round tannins.
