Spruce Budd is a unique spruce ale brewed by Fort George Brewery using freshly foraged spring spruce tips gathered from the Oregon coast. Instead of relying on traditional hops, the brewing process incorporates hundreds of pounds of these locally harvested tips into a light pilsner malt base. This technique creates a distinctively sweet, resinous, and piney flavor profile with bright, earthy citrus notes, allowing the natural botanical characteristics of the spruce to dominate the aroma and taste.
