Coffee Bourbon Barrel Aged Dark Star (2019) by Fremont Brewing is a complex Imperial Oatmeal Stout created from a carefully crafted blend of 24, 18, 12, and 8-month aged versions of their base Dark Star stout. These individual batches are rested in 7 to 12-year-old Kentucky bourbon barrels to infuse the beer with a warming bourbon character. The robust grain bill consists of 2-Row Pale, Roast Barley, Crystal-60, Chocolate, and Carafa-2 malts combined with flaked oats, resulting in a smooth and full-bodied texture. It is brewed with Columbus, Willamette, and Cascade hops and finished with an infusion of coffee, yielding a profile rich with roasted and chocolate flavors balanced by a delicate touch of sweetness.
