Helsing Junction is a solera-style, barrel-aged Farmhouse Ale that originated as a project at Helsing Junction farm in 2010. Featuring over 16 years of blended beer, the project was eventually brought to ilk Beer in 2024. This release blends the historic barrels with a simple Saison brewed using pils and wheat malts, Strisselspalt hops, and Belgian Saccharomyces yeast strains. The resulting profile is dry and beguilingly fruity, offering a soft tartness, spicy aromatics, and a spritzy character.
