The recipe features Hill Country well water, malted barley, malted wheat, hops, farmhouse yeast, wild yeast from the Texas Hill Country, and native souring bacteria. This unfiltered, unpasteurized, and naturally conditioned ale presents a bright and tropical profile with crisp, tart acidity alongside pungent guava and passionfruit flavors and aromas. The resulting beer is dry, highly attenuated, unspiced, floral, and funky.
