Consecration (2014)

Russian River Brewing Company · Wild Ale - American · 10.0% ABV

Consecration by Russian River Brewing Company is an American Wild Ale that begins as a dark, Belgian-inspired ale. It is brewed with dark malts that impart a deep mahogany color and a rich, malty foundation. Following primary fermentation, the beer is transferred into used Cabernet Sauvignon barrels sourced from local wineries. Inside these wine barrels, the beer is aged for several months with black currants and a souring blend of wild yeast and bacteria, specifically Brettanomyces, Lactobacillus, and Pediococcus. This careful barrel-aging process yields a full-bodied beer featuring a complex, tart flavor profile with prominent notes of chocolate truffles, spice, tobacco, currants, and subtle oak. Finally, the brew is refermented in the bottle, creating natural carbonation and leaving a small layer of yeast sediment.
