Consecration
Russian River Brewing Company · Wild Ale - American · 10.0% ABV
Consecration by Russian River Brewing Company is a mixed-fermentation sour dark ale. The recipe features a complex malt bill including 2-row pale malt, unmalted wheat, acidulated malt, Special B, and Carafa III Special, supplemented with dark candi syrup and dextrose. It is brewed with Styrian Goldings and Sterling hops. The brewing process begins with a primary fermentation using an Abbey Ale yeast. The beer is then transferred into freshly emptied Cabernet Sauvignon barrels, where it ages for several months alongside dried Zante currants and a blend of Brettanomyces, Lactobacillus, and Pediococcus. This extended barrel-aging process imparts a rich, tart profile with distinct notes of chocolate truffle, spice, tobacco, dark fruit, and Cabernet wine.
