Double Dry-Hopped Pliny the Elder by Russian River Brewing Company is a Double West Coast IPA that takes the brewery's iconic original recipe and amplifies it with a two-stage double dry-hopping process. Brewed with a blend of Amarillo, Centennial, CTZ, Cascade, Warrior, and Simcoe hops, this version doubles the standard dry hop amount to roughly four pounds per barrel. The hops are added in two stages, first during active primary fermentation and again near the end of fermentation, which interacts with the yeast to create an explosive aroma profile and a slightly softer bitterness than the original. The resulting beer delivers classic West Coast notes of pine, grapefruit, and floral characteristics, alongside prominent stone fruit flavors, culminating in a firm bitterness and a clean, lingering, dry finish.
