Sanctification is a wild golden ale unique for being fermented entirely with 100 percent Brettanomyces rather than traditional brewer's yeast. The brewing and aging process takes place exclusively in stainless steel tanks instead of oak barrels, which allows the pure characteristics of the Brettanomyces strain to remain the focal point of the beer. This primary fermentation method creates a distinctively earthy and funky profile with prominent notes of pineapple, apricot, and other tropical fruits, leading to a mild tartness and a crisp, dry finish.
