Beti by Son of Man is a Basque-style natural cider designed to be an everyday beverage, as its name translates to always in Euskara, the Basque language. It is spontaneously fermented and aged for six months exclusively in stainless steel with no added sulfites. The cider is crafted from a specific blend of apples, featuring 30% Gravenstein, 15% Karmijn de Sonnaville, 15% Newtown Pippin, 20% Domaines, 10% Muscadet de Dieppe, and 10% Muscadet de Lense. This process yields a dry, bright, and fresh profile with crushable notes of green banana peel and zesty lemon.
